I understand your question. First of all in NAV client we can only access pages. If you need sales header table and line table then first you need to have a page for them. By default there are multiple pages for sales header and line i.e. Sales Invoice, Sales Order, Sales Quote etc. All belong to same table but have different pages depending upon the document type.
If you want to have a page that have documents of all types then first create a new page and then add it to the Menusuite using development environment. Then you will see it in customize Navigation pane. But you should have developer license and know some basics of designing pages. If you are not a developer contact your partner to make this change.
