Hello,
One member of my team have this problem :
When he select the view to display 'all the projects' , he gets the following error message : insufficient authorization

but on my side i dont have any error

Does someone know where the problem can come from please ?

Archetype, to check that go to Settings > Security > Users, then take a look at the security roles assigned to the user that cannot see Projects and check the following

if this doesn't solve the issue, you should open a case to Microsoft support!

When you look at the security role, does it have read access to project entity?
