Depending on the specific workflow - some of the workflows are discussed in the Microsoft training material in detail (for example - Financial Management)
My advise would be to choose a simple workflow (for example - AP Invoice Journal) and to attempt a simple, single step approval in order to gain skill and understanding on how it works.
