Hello!

I want to ask you if there is a way that I can add another provider in currency exchange rates than the default ones:

I have searched for more info, but I couldn't find anything.

As Martin suggests, there's great documentation for adding your own provider programmatically.

I would also add that it is worth checking with your provider, because some popular providers, for example xe.com, will provide their additional connectors as a deployable package without the need for any additional development.
