It is my understanding that there can only be one 'super user' of Dynamics 365 Finance & Operations.
It would be more convenient for someone else in my organisation to be the super user.
I am wondering if it is possible to change who this super user is?
If not, can I create another super user, or assign super user status to an existing user?

SUPER is the highest you can have. The user groups are just groups of Permission sets... so if you assign a group you will typically see at least a few Permission Sets get assigned. Permission sets are what are actually granting access... Groups are just a quick way to assign multiple permission sets for a specific role.

Thank you so much! I got our super user to give me super permission also, and now I'm all sorted. Super is the highest permission level, is it? Even more so that the 'administrator' user group?

You can give everyone SUPER if you want... it's not limited to one person. Log in as the current SUPER user and navigate to the 'Users' screen (use the search feature).
Select the user you want to change access for to go into their 'User Card' window. Then at the bottom, under Permission Sets, give them the SUPER permission. If you don't specify a company this will make them SUPER of the entire instance... this would be needed for things like creating new companies or deleting existing companies. If you specify a company they will only be SUPER for that 1 specific company and will not be able to perform tenant wide operations.
