How do I get GP to allow users to edit subject line of email prior to sending?

I have the setting for Allow Update of email Entry clicked on the eMail Setup screen. When the users email invoices to clients they go straight out to the Exchange server and then user has no ability to make any changes. They need to add certain code numbers per customer so the emails get routed to the correct department. How do I get GP to pause to allow the user to add these numbers prior to transmission?
