What is this used for, if not to be used to search in Item type Sales Order Lines and/or other documents?

Normally description is more the official one and search another that could something similar maybe the commercial name. It's like companies, you've the registered name (the official one) but you can have your commercial name that more people know it that way and they don't have to be the same
The Item Search Description is used for internal team members, so if the team member has some short name for the item which is widely used in the company it can be entered there.
Search description is not used in any document which is being sent to the customers.

I did not see that search description in any document. Base on my understanding this is for internal use. For example if you want customer see description "AAAAAAA" for item but your team knows that item by "BBBBBBB" description then you can add this into search description and your team can search by that.
