Build email merge allowing end user to modify template?

Greetings,

Is it possible to build a template (whether an email template, merge template or a document template) that is basically a shell?  I'm hoping to provide the end users the ability to perform semi-automatic email.  I have no issue building the template.  My problem is getting the CRM functionality to let the recruiters:

Edit the wording as they see fit (on the fly, after selecting the students they want to email as a group...whether opportunity or person record).

Assign the reply to email address to be the Office of Recruiting (not their personal email)

Assign an activity code to the outgoing emails to this hand-picked group.

I can perform all of this on a one-off email within a student's record, but the UI changes if I try to do the same thing to a group of students.  At that point, I can't seem to edit the from field or set an activity code.  If I have to build static templates for all of our recruiters, I will end up in admin hell creating endless variations on the theme.  I'd like my recruiters to only think about interacting with students, not campaigns, or activities...but click a small group of students and fire off a simple email with a few nice graphical touches and be able to mark it for me so I can see the activities later on.

    Thank you.  I'm fairly new to CRM administration, so it's nice to have the reality check to see if the problem is me, or just part and parcel of the native product.

    The standard CRM functionality doesn't really give you enough here. Instead, I suggest either looking at the new Microsoft Marketing App for Dynamics 365 (only available in CRM Online), or a 3rd party marketing automation tool such as ClickDimensions, as both give much better template functionality. Both have an additional license cost, though they use different licensing models (the MS Marketing App is based on the number of contacts in CRM, whereas most 3rd party tools are based on the numbers of emails sent
