Does Microsoft offer support with Dynamics 365 or do we need to go through a partner?
Sample situations where we might need help:
1) if we need to create a new company and copy the information over from another company.
2) If a batch is stuck and someone (that we do not have) needs to release it by running SQL statements.
3) If we need to add a new module like the Fixed Assets.
Also, is there any training offered to accomplish that in-house? And if Microsoft does not offer support, where do I find a list of approved support providers?

Besides Andrew's note on CRM/FO, there are other important questions here.
- Are you talking OnPremise or Online?
- Is it an error that you're getting when doing something (reactive support) or something you want to accomplish (Proactive Support)?
On https://dynamics.microsoft.com/en-us/support/, it's stated that with any D365 purchase for Online (either FO or CE) you get Product coverage, access to self help portals, service dashboard, web&Phone incident (that is, reactive) submission and Break&Fix incidents.
For trainings, you have free courseware on https://learn.microsoft.com/en-us/training/browse/?expanded=dynamics-365&products=dynamics-finance-operations (on this case, for FO but you can switch the filters for Sales, Customer Service, Supply Chain, etc)
Finally, if you feel more comfortable with someone around you that you can ask for this series of tasks (training, maintenance, etc), you can search for partners on https://appsource.microsoft.com/en-us/marketplace/partner-dir?exp=ubp8 based on Location, solution, services, etc.
