I've heard that it's not possible to use AD FS authentication with the GP desktop client, although you can use it with the web client, possibly with a 3rd party app (such as Fast Path).
Is there any documentation that clarifies this?

I don't think the document specifically says it. However, here's some text from the What's New help file that specifies the web client:
Identity management
The identity management enhancement enables you to log into your Microsoft Dynamics GP Web Client user account with your organizational account (Azure Active Directory (AD) account). This alleviates the need to log in separately to access your network, SQL Server database and Microsoft Dynamics GP, relying instead on a single secure log in to deliver access to your GP workspace.
Andrew I would caution you on this posting - while coming from a source that is beyond reproach - it is dated - written in 2009, I am not sure even David M knew what was coming for / with or in GP2015 and the Web Client
Do some more research first before you make any decisions on this matter.
