Several years ago i was able to log into customer source and find training on all of the finance related modules for Dynamics GP. Is there still anything like this available for GP now? The only training I've been able to find is all related to 365. We have GP2018.

What Josh refers to is simply the Dynamics GP users guide that used to be provided in PDF format that now is moved to the web under the Microsoft Docs site where all the other products are listed too..
If you're truly looking for training material for GP, there is not much left.. it used to be accessible thru the e-Learning Portal from Microsoft (aka DLP), but the few that were left are now retired too.. The last applicable training was for Financials & Install/Configuration of GP 2015.

I still have a few of the older training material for GP 10, 2010 & 2013.. PM me if you're interested in one particular module of GP.
