We've only used the RMS 2.0 HQ applications on a terminal server.
On a Windows 2008 R2 server we found it easiest to use the MS Application Compatibility Toolkit to configure the applications to "Run As Invoker". This got us around the requirement to run the applications as an Administrator user, therefore meaning we don't need to make our users Admins on the RDS servers.
I believe there is also a MS Support article which explains how to edit the .manifest files for each application to run the as the user invoking the application. We used the MS ACT before I found that article though.
I'm not sure if the POS application would work as I believe each register requires a different PC. Not really possible in a TS/RDS environment that I know of.
I did for one of my client in 2006 with RMS 1.3 on windows server 2000 terminal services and it's still working just fine
