Is it required for create a new channel database for each of them or not need to do that?
If yes, how can i create a new one?

Since a single-channel database caters to all stores, there is no concept of sending a job to a specific store.
In Dynamics AX/if you use self-hosted CSU in D365, we used to maintain different channel database groups to limit the data that flows into channel DB. The same can be done in Cloud if you maintain separate CSU for each store. But it will be overkill.
Q2.- You cannot access/query channel database either in Sandbox/PROD if it is cloud hosted. This is one of the most upvoted ideas. One workaround I follow if I have lots of customized tables in a project is to, roll out a self-hosted commerce scale unit which will provide a copy of DB on my workstation.

In the Retail distribution schedule, you can select / setup in which Jobs will run on 1 channel DB group or multiple if needed. (case you have multiple CSUs - although yes it's good to place CSU based on the near location)
You can after that duplicate - create a new one from scratch
And setup a batch job scheduling based on your requirement. (My side I have 2 CSU, for 14 online stores, 7 on each of them have been assigned) and I can run specific jobs if I have want to push data to 1 CSU or the other one, or both of them.
The Channel DB is stored on the CSU in the cloud - azure region you have selected. Or could be self-hosted if you like. but if i create only one channel db for all stores, how can i send a specific job for specific store?
when i run the job, all data would be transferred to all stores.
And suppose that we have some various regions that various stores placed on it.
Q2. where is the database of the store? haw can i select a query using SSMS? how can i access that?

A separate channel database is not required per legal entity. You can host stores from multiple LE in one channel database.
If the users are geographically located in different parts of the world, it is recommended to deploy CSU in an azure region that is near POS users to avoid performance issues due to latency. You can deploy a second CSU from LCS. Please refer learn.microsoft.com/.../provisioning-guide for more details. Once initialized you should see a second channel database.
