If I wanted to impersonate a user so I see what they see, for testing purposes is there a way to do that. I currently setup my security as the person but I'd like to test more directly by impersonating.

Your options sort of depend on how many license you are willing to commit to use for testing purposes and how your user are validated when logging in. We use a single placeholder Admin license and change its Business Unit, Security Roles, etc. as needed for testing. Trying to impersonate an actual user without having their username and password would be pretty tough.
If you are talking about internally using the web application, then unless you have the user's username and password, you will not only be able to do this. Using SDK code you can impersonate another user (in plugins or other service applications).
The best option is as you already did, set your user account to have the exact same privileges as the user in question, but it is not full proof, as there still might differences. Also make sure you and the other user are in the same business unit and teams and this affects the testing as well.
Ideally, if you have test accounts, you can use them as users in the different business units/teams.
