We are using a different entity for the schedule board. How can I remove the Project and Unscheduled Work Orders tabs below?

You should be able to remove them from the Tab Settings area as shown below
Go to Tab Settings, then click Open Default Settings, select Requirement Panels and select the tab you want to remove and click on the Minus (-) button to remove the one you selected
