I am getting the data from CDS and the User Data Type data is coming as GUID in Power BI - any clue why is it happening so ?

Hi,
You will have to load systemuser table from CRM apart from Custom entity/Accont to get User fullname and any other fields.
Use lookup function to achieve your requirement in Power BI. Lookup function is same as join in SQL. See below atricle.
