Offset Account on Counting Journal Type

Offset account field appears to be grayed out on counting journal type (Inventory >Setup >Journals >Journal name, inventory). Is there any way to enter an offset account or it's not applicable for counting journal types at all?

The accounts on the item group are always used by Count Journals. See also:

... and just to make sure... if I update accounts in Inventory >Setup >Posting >Posting >Inventory tab it will change what offset account count journal transactions are posted to, correct?

Yes. And it will do the same for inventory journals of type 'Inventory adjustment', which also always use the accounts defined there.
