We've a requirement to trigger an email if no entry was made by the sales persons for the past one week to their respective managers'.

Hi,
You need write custom workflow activity and schedule that activity in wait condition in asynchronous workflow.
Customer WF activity will fetch record by createdon descending and then compare it with today's date for sending email
