We add contacts to segments which kicks off a campaign journey (sends an email). I want to track the date a contact is added to a segment, so I can see for example how many contacts started the campaign in x weeks. Is this possible?

The date you mentioned cannot be tracked.
But if you'd like to filter out the contacts who are processed in a certain customer journey in x weeks, it can be achieved with a segment something like:
