Interpret SQL process monitor

We're looking to move one of our database servers to the cloud, so I ran the Azure DTU calculator for two days.  At the same time, I also ran the DTU calculator on our GP server to see how the two of them compared.  Needless to say, I am confused by the results.

Here is the graph from GP

Here is the graph from our main DB server.

The spikes on the GP server seem to be way above and beyond the load we see on our main DB server, but the main DB server workload seems to be more uniform.
