Is there a way to obtain the Audit History of a specific field even though it is not setup/enabled on the entity ?

Hello Sanjiv,
No, without auditing turned on for the Entity and Field, there is no means to obtain the Audit History.
The only advice I can offer beyond that is that, you could review the Modified On date for the record for a clue as to when the field might have been changed and restore a backup of that environment from prior to that date to review the data. This would depend on your backup retention policy if you are in an On Premise deployment. If you are in Online, the available backups would be 28 days for production instances, and 7 days for sandbox.
