Your CRM upgrade process is correct.

I am not sure what your processes are like for retrieveing data from Oracle to CRM, and moving data from On-Prem to Online, and how you are accessing the CRM data (SDK, SSIS, etc...) but as far as the processes, it should stay the same, and you would have to change the connections to CRM (from Oracle), and from CRM (to CRM Online).

If your processes are retrieving/updating data using the SDK, you need to make sure that you are using an updated version of the SDK dlls. If you are using Xrm.Sdk.Client, you will need to change that to use Xrm.Sdk.Tooling.Connector assemblies.

If you are using SSIS packages (with KingswaySoft for example), I would recommend updating to a later version of the product which is designed to connect with CRM 2016/365.

    Hope this helps.
