In v2010 I believe you can set the lookup to show certain columns of informaiton and then set that "view" as the default. This functionality is per user so it would have to be done on everyone's machine.
You could also do some modifier with VBA or VST code to manipulate the display and deploy it on all the workstations.

I've done this before - Aaron is right, the trick can be using VBA set to the window's open event to simulate changing the sort. It happens instantly, totally undetectable.

Does anyone know if GP 2010 has the ability to create custom views that show a different column by default, as suggested by Aaron above? If so, how is it done? I don't want ot use custom code, because some user prefer sorting by item number, while others use description.
