Obviously not every store will use all the basic function keys (I don't sell gas, etc). Is there a way to remove or rearrange them that I am overlooking?

Hi there. I don't think it's possible to alter, rearrange or change the function keys.
But, here are few ideas of what You can do:
- You may add any of the fucntion keys to a personalized custom button on right hand side
- or you can create a personal touchscreen keyboard with the functions You want...
- or create your own html based screen, for the upper HTML status screen or that you call call by Custome button, with all the functions you want..
