I'm curious if there is a way to stop emails from automatically being sent to customers when an old case is closed.

You can put a condition to check the case status. However, If you can tell me your scenario, it will be helpful to provide a more precise answer.

We sometimes have activities such as a meeting that we want to close. Every time we close an old forgotten activity, an email is then sent to the "customer". The email contains an update of the case.
You can configure the workflow rule associated with the activity to not send an email when the activity is closed or updated.
