
Can we easily create custom fields or change field labels in Customer Service Accounts & Contacts?
We are small not for profit group, new to Dynamics 365, who purchased 1year subscription of Customer Service Professional for 4 users; thinking will be great for our team initially as basic CRM, but to evolve as we become more sophisticated with our ability/use of features/functionality

You can go Settings > Customizations > Customize the system > Entities > Account/Contact >Fields.
Clicking New button to create new custom fields.
Also, if you want to change the label of field in the form, you can navigate to Forms and open one form you need.
Double-click one field to open 'Field Properties' dialog, then change label.
Test Result:
Note: The user need be assigned security roles of "System Administrator" & "System Customizer", then the user can access customizations,
