Hello,

is there any way to disable the colored area (buttons etc) in the grid view?

The area should only be for viewing linked entities and should not provide any way to add products.

You can hide these buttons with Ribbon Workbench. If you only want to limit the add product function, I think it would be better to restrict it by privilege design, because use can still add product in Advance find.

Yes, You can hide this from  make.powerapps.com or Ribbiob workbench.  Those will show under the subgrid. You can hide directly or set enable rule with condition.
