Approval for updating a field in employee self service workspace

Hello,
  • The business requirement is to create an approval of employee information changes such as address and method of payment. 
  • The user should be able to make a change but then submit that change to be approved.
  • New data should not be written to the employee table before it is approved. Only after it is approved.
My initial thoughts:
  • Since data is automatically updated when the user changes it, then these field should be set to non-editable so that user cannot change them without the approval.
  • New fields should be created that hold changed values waiting for approval. These fields should be editable so that user can input new values and submit them.
  • Run workflow and when it is approved update master data with values from new fields.
Any ideas or experience with approval for updating field values would certainly help me.
