After having transformed the quote in purchase order , is that the quotes stay stored in the database? if so what the number of that table?

There is no separate table for purchase (and sales) quotes, they are stored in the same tables as purchase invoices (non-posted) with just a different type of document (Table 38 Purchase Header contains Document Type field with options Quote, Order, Invoice, Credit Memo, Blanket Order, Return Order. Whey you transform quote into purchase order it is normally deleted as it is not needed anymore (as well as the purchase order is deleted when fully posted).
