I'm a user of Action Pack with Dynamic 365 "Custom" included. When I open https://home.dynamics.com/ I see the Dynamics 365 custom app and when I click on that I don’t see the a helpful menu structure, just some rudimentary options: no dashboard, no “my work” and so on (see screenshot). I do have access to my data by the magnifying glass and I can create a new record (contact, company and others) but there is no way to scroll through the data, to build a dashboard and so on. Is there a ready made, simple GUI which I could use out of the box or do I have to define by myself first with Power Apps?

Go to https://make.powerapps.com/ and open solutions to see if you have any application solutions, like Dynamics 365 Sales Application, Dynamics 365 Customer Service Application.
If so, when you new a model-driven app, you can select "Use existing solution to create the App" with these application solution.
If not, you have to edit the site map and add the entities by yourself.
