With email templates I can use dynamic fields to personalize the email greeting based on the contact receiving the email. Can I also personalize the signature based on the sender?

No, you can not achieve this through dynamics fields.
However you can create several static email signatures. Steps: Create email signature in Dynamics 365 Customer Engagement (on-premises) | Microsoft Docs
When you create email, you can select which email signatures to use by click Insert Signature Button.
