how does one setup tags / keywords for a product in dynamics . for eg. if I have a product named cheesecake , how do I setup keywords such as cakes, cheese, etc. so I can classify the product in retail and in dynamics.

In testing in Commerce and POS, the product Description is Searched.
For example, if I search on Ball at the POS, it finds Product 81103: Stretch Wool Suit.
In the Released Product Details form, the word 'Ball' can be found in the Description of the product:
Thanks. We do not use the Commerce site currently but we are exploring on how do we set tags on retail products in Dynamics 365 SCM.

did you check PDP form on Commerce site builder? Is there anything related Tags?
You also could try new feature 'Shop similar description', maybe would work for your scenario?
