This could happen from a few reasons. One common one: The Unified Activity data source was created originally for one user, and then a second user edited the connection linked with the data source and logged in with his/her credentials.
Please work with your tenant admin to open a case here - admin.powerplatform.microsoft.com/support, and mention in the ticket description that "it's advisable to use the trouble shooting guide called "Activities not reflecting on powerapps" through the Unify global search."
