Adding Field Level Security to Owner Field

I am turning off the ability for our sales reps to change an Account once it's created, however, I want them to be able to assign accounts to themselves, so I have gone into field level security to do that, but I noticed "Owner" is not there.  When I go to that field to enable field level security it is greyed out.  Does anyone know how to enable field level security for the owner field?  Is it possible?
