We need to set up an item with several configuration / variations.
I found two options for doing this but we are not sure which one to use.

There is a product configurator module. See e.g.

If there are few combinations then separate boms for each combination may be simpler.
We have developed a new item for our customers however the item can be tailored to the customer requirements.
Essentially there is 1 master unit and 4 optional sub units. Each unit type comprises of several components.
Should we set up as Product Variant or BOM configuration or is there another option available?
It's not very clear from your question on what you are trying to do, you seems to be using generic keywords. Here is what I would understand and see if it make sense:
1. Product variant - there are different configuration technologies behind it.. Pre-Defined variant... E.g. Shirt can have different color (RED, GREEN, BLUE etc.). So use pre-defined variants.
There are few other complex configuration technologies that you can review. E.g. you want to install speaker system and you want to have Q&A type questions before you determine what you want your customer to buy.
Can you state what you are trying to achieve OR your business requirement.
