Setting up Remittances for EFT payments in GP 2015

We have just set up EFT payments and are exploring the best workflow for EFT payment remittances.  We run GP on a server (vs. individual workstations). Our GP consultant has suggested installing Outlook on the server so that GP can initiate remittance emails direct, however our IT department has reservations about installing Outlook on the server for security reasons.

Was curious how other folks configure the EFT remittance communication.
