In Data Management, we have 2 large export jobs that run nightly, to export data to our BYOD.
They generally take about 1 hour each to run. But, both export jobs from last night have been going for about 20 hours & counting.
What's the best practice / troubleshooting for a situation like this?

You can check if there was an interruption of the service, e.g. due to a deployment or update. If that is the case, the jobs might have been killed where the status is not being reset. If that is not the case, you can check if there is still activity using environment monitoring on LCS.
