I already have global customers at HQ, however I 'd like to add more field to enter some information for my existing global customers at HQ. How to enable it?

For some dumb reason you can't set the Custom Captions for the Customer Additional Information fields in HQ Manager like you can in SO Manager. It can be done in HQ Admin using this query though:
UPDATE CustomCaption SET Caption='YourCaption' WHERE Style=X
Change YourCaption to be the caption you want for the field and change X to a field number between 1 and 33.
1 - 5: CustomerTextField 1-5
6 - 10: CustomerNumberFields 1-5
11 - 15: CustomerDateFields 1-5
16 - 33: Other custom captions(supplier, items)
BACKUP FIRST!
Then set the fields to match in SO Manager at each store in Configuration/Captions. AFAIK there's no way to send the caption info from HQ to SO. (also dumb)

and don't forget the Notes field
You have 5 date, 5 number and 5 text fields that the SO can see/change/add on the Additional tab
