this is the Query Builder section inside FetchXML Builder, which corresponds to the fetchXML that is associated with a specific view (in this case is the All Accounts View for the Account entity):
How would you describe this structure? Is it a particular type of diagram? If so, which is its name?

It can be referred to in FetchXML Builder - Features
I would just call it the query builder view.
