Could you help me in resolved this problem?.
I created fields in sales quote, but when I tried to add the same's fields in sales order, I have an error because it was previously declared the same target "Sales header"

Yes for the Sales Header table's extension, you have already created that in same app, can you please investigate, you can only use one table's extension in same app.

Both Sales Quote and Sales Order page uses the same Table which is Sales Header(36) with different Document Type as Quote or Order. Therefore, you only can create one Table Extension and display the particular fields in the particular pages such as displaying Quote related fields in Sales Quote page only.
In simply Sales Quote and Sales Order are different pages but retrieve data from a single table (Sales Header)
