Users can't change Email Regarding or resolve Email addresses

Since we applied the SP1 + Update 1 to our CRM 2016 On-prem instance Wednesday, most Users cannot do what they previously were able to do:
When our Users receive Emails (and the email is in "Received status"), they previously could make the Email "Regarding" something (a Contact, Account, Case, etc.)
Also, when we received emails from Contacts, our Users previously could edit the "From" field to resolve the email address to connect to a customer (Contact or Account).

Now when they change the Regarding field or From field on a Received Email and try to leave the record, they get a message that "Access is Denied: You do not have enough privileges to access the Microsoft Dynamics CRM object or perform the requested operation" or they get an alert that their changes have not been saved.

I created two workflows: one that sets the email back to Draft status so they can edit it, and one that sets the email back to Received/Read-only status after they've changed it, but these are extra steps they didn't have to do before.

The issue doesn't seem to be with permissions. I have a "Test" User with even less permissions than they have that is able to change the Received email records without error.

Suggestions on what changed between CRM 2016 and the SP1 + Update 1 that now prevents users from editing the From: field and Regarding field on received emails?

    We had to turn on Legacy Form rendering to stop errors when Users edited the "From" and "Regarding" fields on Received emails.
