Hi Catalina - does this 60 minute refresh apply to dynamic segments based on interaction data. Christian's response earlier in this converastion implies that refreshes for these segments are on demand:
From Christian - Dynamic segments based on interactions will as well be evaluated once they go live. Once live they will receive a trigger when new relevant interactions arrive, and the segment re-evaluation will be taken up then as the engine has calculation capacity.

The refresh rate is set to 60 min for Dynamic Segments. It cannot be changed.

let me share some details on the topic:
The evaluation represents the calculation that finds the members
Dynamic segments based on profiles and relationships will be evaluated once they go live. The calculation happens asynchronously, and the results of the query will be available shortly after - press refresh to expect the results.
Once live a reevaluation will be scheduled once an our such that every hour different contacts may be returned from the segment.
Dynamic segments based on interactions will as well be evaluated once they go live. Once live they will receive a trigger when new relevant interactions arrive, and the segment re-evaluation will be taken up then as the engine has calculation capacity.
Static Segments well be evaluated once they go live, meaning the member selection will be accepted into the live segment results. Static segments will then be re-evaluated each time that member management operations are being done.
Please note that at the moment when contact are being deleted the membership will not be removed automatically, yet delete contact will still not be returned as segment members. This behavior will be updated in a future release.
Dynamic Marketing Lists will be evaluated in demand, when the lists is asked to return contacts in order to show them on the members grid, or when a Campaign Activity or Quick Campaign is being distributing activities for the member audience.
Static Marketing Lists will return the list of members on demand as defined in the lists member relationship object each time the members grid refreshed, or when a Campaign Activity or Quick Campaign is distributing activities for the member audience.

I couldn't find any official documents on the refresh rate of a segment while I would provide the following working with segment which could be for your reference:

To force the refresh , I think you need to select Go Live on the command bar, to publish the segment (you won't be able to use it in a customer journey until it goes live, even though you've saved it). Dynamics 365 for Marketing checks the segment for errors and reports any problems it finds. If an error is reported, fix it and try again. If no error is found, your segment is copied to the Dynamics 365 for Marketing email marketing service, which makes it available for use by a customer journey.
