Hi everyone,
I want to customize Grid column header filter options like remove ("after", "before","match") options or change the order of conditions (E.g: Move "contains" condition to first position).
Can anyone tell me is it possible to customize Grid column header filter?

This is not possible. It is part of the grid control itself. This control is managed by Microsoft. The last used option will be saved for each user/form.
If you have business requirements where you need to have this different, you can try to create a post on the ideas site: https://ideas.dynamics.com.
I agree with Andre.
This lookup is system defined filter even you can't find it as code in form or class.
When you change the selection option, it will save the last one for you.
You can choose to contain, then next time this column defaults to contains, other columns are not affected
