is there any way to consolidate similar items on the POS screen while scanning in RMS? or is there any way to consolidate similar items in the printed receipt in RMS?

There is an add-on that will stack the same item together. Only problem is that you have to know what "generic" items to not include before installing it on your POS terminals.

Items where you have to input the price would be a generic item.

You would need to contact a reseller for more information.
