Connect CRM 2016 (on-premises) to Exchange Server (on-premises), how not to see private emails in the organisation level

Connect CRM 2016 (on-premises) to Exchange Server (on-premises), Server-side synchronization only

 In our organisation we would like to use ONLY Server-side synchronization, without any additional apps. When we are synchronizing records with server-side synchronization, the synchronization happens automatically at the server level and all emails, also private, even they are not tracked in CRM as they are not included inside the tracking folder, becoming visible to the whole organisation. 

What would be the best solution to exclude those private, not tracked emails from CRM? How to make them private and other emails, for example those, which have field 'regarding' to keep visible on the organisation level?
