Can I change "Streaming provider" from Teams Webinar to Live events on Live event? The event is taking place in couple of days.

you could change the streaming provider, but the link to join the event will change; so those registrants who have registered before your change might be impacted - if they have received joining link to Webinar. In that case they will be unable to join live event.
You could resolve that by redistributing the link to join
