Has anyone customized Business Central to have credit values format as ($$$$) instead of -$$$$?

Specifically looking to customize in ledger entries.

Using ( ) instead of - in values

The formatting you are looking for is not one of the standard formats avalible so it will not be a straight forward task to change that in the pages that display the customer ledger entries and at the same time keep the functionality connected to the amount fields.
