I would like to instantiate a class SimpleProductClass for my product added to cart in POS extension. I was checking samples provided in RetailSDK but I couldn't find the same.

could someone help or guide me how to initiate the same.

Did you try to add the import statements to import the relevant entities and context? Please start with the MS document for the POS extension:
