Hello,
I would like to know if Microsoft performs a back up everyday ?

Information about backups performed by Microsoft can be found in the Service Agreement of CRM Online.
There, you can see that:
7.3 Microsoft will not own any Content. Microsoft performs regular backups of Content for the purpose of recovery in the event of a failure in Microsoft’s data centers. However, notwithstanding the foregoing, Customer is solely responsible for maintaining and backing up any Content that it uses with the Service. Customer, not Microsoft, shall have sole responsibility for the accuracy, quality, integrity, legality, reliability, appropriateness, and intellectual property ownership or right to use such Content. Microsoft shall not be responsible or liable for the deletion, correction, destruction, damage, loss or failure to store any Content that Customer uses with the Service.

Abe:
CRM online will not allow you to do this. You can contact CRM and they will do a backup and send you the files but I think that's only twice a year.
