Hi,
Is it possible to put hold/cancel indicator in sales order line and it should block for further processing which will block inventory reservation/commitment of stock for particular sales line?

As suggested by other experts, a default option is not available out-straight, however you can use Approval Workflow (in a limited capacity) to fulfil your use-case as highlighted in the link posted by Inge M Bruvik
The only think I can think of in the standard system that will help you with this is if you implement a process where all your sales invoices should be released before they can be processed further. It might not take you all the way but it could be a help.
You can also implement approval process for sales orders.

I am not sure if we have such kind of feature available in standard system for Sales line, but yes you can block the Item which are using in that line.
